A remarkably adaptable tree that when pruned to a hedge standing at about 2 metres in height, retains its juvenile old foliage throughout the winter months. This is a physiological response to put off grazing animals from browsing dormant buds by protecting them with the dry unpalatable leaves. New green leaves emerge in the spring and at this point the old brown leaves are discarded. Beech and Hornbeam make very similar hedges and their use is governed by soil type; Beech for the lighter soils and Hornbeam for clay soils.
